Tropical Fruit Salsa Recipe

This ice cream topping salsa contains pineapple, mango, and papaya and (optionally) strawberries. It is flavored with passion fruit juice, mint leaves, a little serrano chile, and brown sugar.

Ingredients

- 1 pineapple, peeled and cored
- 1 mango, peeled and cut off the pit
- 1 papaya, peeled and seeds removed
- 1 pint strawberries, stemmed (optional)
- 1 small serrano chile, stemmed and seeded
- 1 tbsp. brown sugar
- 1 tbsp. fresh mint leaves, thinly sliced
- 1 tbsp. passion fruit juice

Instructions

Cut the pineapple, mango, papaya, and strawberries into uniform size pieces. Finely mince the serrano chile. Toss the fruit and chile with the brown sugar and fold in the sliced mint mint and passion fruit juice. Chill. Serve on top of vanilla ice cream.
