Chicken Long Rice Recipe
This Chicken Long Rice luau recipe was provided courtesy of
the Polynesian Cultural Center on the northeast shore of
Oahu Island in Hawaii. The Polynesian Cultural Center's
published luau recipes are similar to the recipes used for their
Alii Luau Feast
Ingredients:
2 pounds of chicken thighs
1 round onion
1 package of long rice (aka bean thread)
2 tablespoons of chicken base
2 tablespoons of crushed Ginger
1 teaspoon of garlic powder
1 teaspoon of ground ginger
Water to cover the chicken
Instructions:
Place the chicken in a pot, cover with water,
and parboil until soft. Save th broth
to use later. Run the chicken under
cold water and shred into a large container.
In another large container or mixing bowl,
soak the long rice in hot water until soft.
Drain away the water and cut the long rice
with scissors.
Add water, chicken base, ginger, onions, and
seasonings to shredded chicken.
Add long rice and simmer until soft.
