Maui Onion Poppers Recipe

This dish created by Rowena Felice won the Maui Onion Festival festival recipe contest in 2003.

Ingredients

Poppers Ingredients:
-2 large Maui onions
-1 clove garlic, minced
-1/2 cup chopped macadamia nuts
-1/4 cup seasoned onion powder
-1-1/2 cups panko
-1 teaspoon salt
-2 tablespoons butter
-2 egg whites, beaten
-1/4 pineapple, chopped

Spicy Pineapple Dipping Sauce Ingredients:
-3 tablespoons cider vinegar
-2 tablespoons pineapple juice
-1 tablespoon lemon juice
-1 tablespoon salt
-1 tablespoon crushed pepper flakes, optional

Instructions

Slice onions into thick rings. Separate rings. Finely chop the largest rings to make about 1/2 cup.

Mix chopped onion, garlic, nuts, onion powder, 1/2 cup of the panko, salt and butter. Stuff this mixture into the unchopped onion rings. Dip stuffed rings into egg white and roll in remaining panko. Deep fry.

Mix sauce ingredients together.
