Ingredients
- 5 pounds (2.25kg) pork butt, untrimmed
InstructionsCut the pork butt into cubes, but do not remove the fat, because sausage needs to have fat in it. Use a meat grinder to coarsely grind the meat or ask your butcher to do it for you. In a large bowl, mix the ground pork with the remaiing ingredients. Form the sausage meat into patties or stuff it into sausage casings. Grill the sausage until fully cooked.
