Mango Egg Nog Recipe

Ingredients

- 4 eggs
- 1/4 cup of sugar
- 2 cups of milk
- 2 cups of whipping cream
- 1 mango to make about 1/2 cup of mango puree
- 1/4 cup of rum (or to taste)
- 1 teaspoon vanilla extract
- Nutmeg

Instructions

Make the mango puree by peeling, seeding, and dicing one ripe mango, then pureeing the pulp in a blender until smooth. In a separate bowl, beat eggs and sugar together well, then stir in the milk. Cook milk and egg mixture gently in a double boiler about ten minutes, or until it thickens. Stir constantly so the eggs won't settle and cook in a solid mass. When the mixture is thick enough to coat the back of a spoon, remove from the heat. Add the whipping cream, mango puree, rum, and vanilla. Chill before serving and serve sprinkled with nutmeg.
