Ingredients
- 2 pounds of potatoes
InstructionsPeel the potatoes and cut them into bite-size pieces. Mix the 2 cups of water with the 1 tablespoon of rock salt and soak the potatoes in that brine for 10 minutes. While the potatoes are soaking, mix 1 cup of water with the soy sauce, sugar, garlic, pepper, and vegetable oil. Remove the potatoes from the brine and drain well. Spread them in a shallow pan or skillet, pour the soy sauce mixture over them, reserving 2 tablespoons for later use. Cook the potatoes over medium-high heat for 10 to 20 minutes. Stir occasinally to redistribute the heat and prevent them from sticking to the pan. Remove the potatoes with a slotted spoon, place them in a serving dish, and sprinkle them with the reserved 2 tablespoons of sauce. Resources(to be added) Collection of Recipes From Hawaii
