Filipino Bibingka Casava Recipe

Ingredients

Bibingka Ingredients
- 3 cups grated cassava
- 1 1/2 cup coconut milk
- 1 1/2 Tbsp. melted butter or margarine
- 2 eggs
- 1 1/2 cup sugar
- 3/4 tablespoons of fine salt
- 1/3 cup of coconut cream

Topping Ingredients
- 1 cup thick coconut milk
- 2 tablespoon flour
- 1 can condensed milk
- 2 egg yolks
- 2 tablespoons grated cheddar cheese

Instructions

Bibingka Instructions
Beat the eggs. Add the sugar, salt and butter and mix well. Add the coconut milk and the grated cassava and mix well. Place in a greased pan lined with wax paper. Bake at 375 degrees farenheight for about 45 minutes. When almost done - when the color is light brown - brush the surface with coconut cream Continue baking until golden brown, about 15 more minutes.

Topping Instructions
Mix coconut milk with the flour. Add condensed milk and cook over medium heat till thick. Add egg yolks and mix well. Return to heat and cook 5 minutes more. Pour over baked bibingka. Sprinkle with the grated cheese and broil till golden brown.
